My Super Quick and Easy Corn Bread
Lets Get right to it because no one likes to read super long blogs just to get to the recipe
Ingredients:
1 cup flour (gluten-free optional) 1 cup cornmeal
2/3 cup white sugar
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk (baking powder optional)
1/3 cup vegetable oil (olive oil optional)
Directions:
Preheat oven to 400°F. Grease an 8x8 inch pan (coconut oil optional).
In a large mixing bowl, combine flour, cornmeal, sugar, salt, and baking powder. Stir in egg, milk, and oil until well combined.
Bake for 20–25 minutes, until a toothpick inserted in the center comes out clean.

I usually pair this with Crockpot chili on busy nights (I’ll post that another time)
Some of us in my household have food sensitivities to dairy or gluten. This recipe is so easy to make both gluten and dairy free.
