Easy Layered Taco Bake
I like to use this recipe on days that I have more time during the day to put dinner together, than I do in the evening. There are quite a few nights during the week, where I’m just not home. I’m pretty certain that my family gets sick of the “free for all” nights. Premade casseroles and slow cooker dishes are my answer to making sure my family has dinner and so I feel like a champion for actually feeding them.
And…. Just in case you forgot…. I hate cooking! So simple recipes is what you will always get from me.
Easy Layered Taco Bake
This Easy Layered Taco Bake is the perfect weeknight dinner when you need something simple, hearty, and made from pantry staples. It’s customizable, family-friendly, and comes together with just a few basic ingredients you probably already have on hand!
Ingredients
1 lb shredded or ground meat 1 packet taco seasoning
1 can refried beans
1 cup salsa
2 cups shredded cheese
Optional: olives, corn, jalapeƱos, onions, or pantry add-ins
Instructions
Preheat oven to 350°F.
Cook meat in a skillet over medium heat until browned. Drain excess grease if needed.
Stir in taco seasoning and prepare according to packet directions.
In a small casserole dish, layer refried beans, seasoned meat, salsa, tortilla chips, and cheese. Add optional toppings between layers if desired.
Bake uncovered for 30 minutes, until cheese is melted and bubbly.
Serve warm and enjoy!
I usually stick the prepped casserole in the fridge with a note on top for my family. Just in case I won’t be there to bake it for them.
I am 100% an average Cook. I really hope that this blog is helpful to all the other busy moms out there with no desire to be the worlds greatest chef…. But still want to feed their families decent meals.
